When people think of Kimbap, their attention mostly goes to the colorful inside fillings of pickled radish, spinach, egg, beef or tuna. But holding everything together is an ingredient that is just as important as the rice itself: Gim (김), Korean seaweed.

What Is Gim?

Gim is an edible seaweed, most commonly made from Porphyra species. Gim is harvested from clean coastal water, then dried into thin sheets and often lightly roasted. Its deep green-black color with delicate crispness and subtle flavour make it a cornerstone of Korean cuisine.
