Banchan Culture: why korean meals are never one dish

Korean meals are instantly recognizable for their abundance and representation . A single bowl of rice is often surrounded by several small side dishes, known as banchan (반찬) a culture in korea. To outsiders, this variety may seem excessive, but in Korea, banchan is not about luxury—it is about showcasing their cultural norms, balance, community, and cultural values deeply rooted in Korean history. Meals are never just one dish because food in Korea is deeply rooted in their culture . The tradition of Banchan (반찬)– small side dishes served with rice- reflects how korean people view eating not just a nourishment but as a holistic experience.

The definition of Banchan(반찬)

Banchan refers to the small side dishes served alongside rice and soup in a Korean meal. These dishes can include vegetables, fermented foods, tofu, seafood, and occasionally meat. Kimchi is the most well-known banchan, but many other food item—such as seasoned spinach (sigeumchi namul), bean sprouts (kongnamul), and braised potatoes (gamja jorim)—are equally essential.

Unlike main dishes in other cuisines, banchan is shared by everyone at the table, reinforcing a sense of togetherness. A Korean table may have 3 to 12 or more banchan depending on their occasion.

Why the Korean Meals are never just one dish

Philosophy of balance yin- yang and five elements. Korean food is influenced by Eastern philosophy focusing on balance. In korea rice is the center food to complement the rice the side dishes Banchan (반찬) co-exist with the center food. Korean meals aim to balance spicy & mild, Hot & Cold, Fresh & fermented. One dish cannot offer this balance but various small dishes can.  Now the Key reasons of the Banchan are:

  • protein (tofu, fish, eggs, or meat)
  • vegetables (often fermented or seasoned)
  • probiotics (from fermented banchan like kimchi)

Each banchan contributes something different, ensuring a wholesome and satisfying meal without excess.

Fermentation and Preservation :

Fermentation plays a major role in banchan culture. Foods like kimchi, soybean paste dishes, and pickled vegetables were developed to last through harsh winters. These preserved foods not only enhanced flavor but also added health benefits, making them central to daily meals.

In Korean cuisine, a meal is rarely centered around a single dish. Instead, it is accompanied by an array of small side dishes known as banchan (반찬).
